If you've been hunting for a proper dosa in Parramatta — the kind with a lacy, golden edge that crackles when you press the side of a spoon into it — this is the kitchen that's been doing it the old way. The Royal Udupi sits on Marsden Street, a short stroll from Westfield and Parramatta Station. The batter is fermented overnight, the tawa is cast iron, and the benne (white butter) goes on at the right second so the bottom caramelises rather than fries.
Most South Indian places in Sydney lean Andhra or Tamil. Ours is Udupi-Karnataka — the tradition that gave the world the masala dosa in the first place. That changes everything: a slightly thinner batter, more emphasis on the dosa's crust than on the filling, smaller-flake roasted-lentil podis instead of the coarser northern versions, and butter that's specifically benne — the cultured white butter Bangalore dosa shops still churn fresh every morning.

Why Parramatta comes for our dosa
Cast-iron tawa, no shortcuts
We use seasoned iron tawas — not non-stick — because that's what gives the dosa its signature gold-brown crust. Each one is hand-spread by the chef, never pre-pressed.
Overnight-fermented batter
Rice and urad dal soaked and ground fresh each evening, fermented overnight, ready at open. Same process the Bangalore Udupi messes have used for a century.
Benne — the real Bangalore butter
Our benne is white cultured butter made the South Indian way — not regular salted butter. It melts differently on the tawa, leaving the deep, nutty edge you remember from Vidyarthi Bhavan and MTR.
